Sorbic acid is widely used for its inhibitory effect on molds in bakery products. However, it has limited applications in yeast-leavened products because it exhibits the same inhibitory effect on yeast, and ultimately on the fermentation process (Pyler, E.J, Bakery Sciences...pg. 230). This will reduce the function of yeast and bring less volume in the final bakery products. When microencapsulation technology is applied, the sorbic acid is protected with a layer of vegetable oil so that the yeast is protected when in contact with the sorbic acid during the fermentation process. At the end of fermentation and during the baking process, the sorbic acid is then released and functions as a mold inhibitor for the shelf life of the bread.
